Coffee Rubbed Pork Chops

 

 

Coffee Rub

1 teaspoon of finely ground roasted coffee

1 teaspoon fresh thyme

Salt and pepper

In a small bowl mix the rub and ingredients with your fingertips.

 

Rub onto porkchops or other meat.

 

 

Baked Porkchops with Apples and coffee rub

 

2 Porkchops with pockets

2 Braeburn apples

1 cup of apple cider or bourbon

¼ cup chopped onion

1 teas chopped garlic

1 teas. Chopped thyme

1 cup of beef stock

11/2 cup of whole grain bread cubes.

Salt and pepper

 

 

Spread  on the Coffee rub on to the chops . Mix the onion, garlic and bread cubes together. Add the chopped thyme, salt and pepper.  Add enough beef stock to make a moist mixture. Place  a spoon ful of the bread mixuture in each pork pocket. Brown chops in the saute pan with a drizzle of oil to the pan.  When chops are brown turn over and place remaining bread mixture under each chop.  Place in the oven for the remaining of the cooking with remaiinging apple cider and beef stock added. Add sliced apples and let cook in a 350  oven for 20-30 minutes more. Remove when chops are done and no pink remaining in the meat
