Mango Chutney Salad with Lime Vinaigrette

Ingredients Needed:

  • 1 mango cut into bite sized pieces
  • cup bite sized pineapple
  • Craisins to taste
  • Lime vinaigrette
  • 1/3 cup of soy or olive oil
  • 2 limes juiced
  • 1-2 tablespoons of honey
  • Salt and pepper

Serve salad on a bed of spinach greens. Shake dressing in a container and serve over salad.
Great warm weather recipe. You can add cooked chicken, turkey or fish for a main dish meal and you didn’t heat up the kitchen.
